I find the manipulation & management of "big data" analytics to be fascinating & very powerful. Our World in Data provides a very slick and clean UI for a lot of different topics and makes it simple to drill down to the details.
Untapped Cities has all sorts of little known but interesting facts about NYC, filming locations, abandoned ruins or hidden places.
Ian's Shoelace site is all about shoelaces. I know, sounds boring but you'd be surprised how many different styles of lacing there are, why some are better for certain applications than other. Getting laces perfectly strung so they're not just functional but make the shoe/boot look its best seems to satisfy my OCD.
