What's on the menu tonight?

Bolognese.. kinda.. and again (I like my pasta)
So
Garlic, two cloves, smashed em, shove em in pan, added oil, cracking.
Threw in one diced red onion, one diced brown onion, sizzles.
Cut up two sticks of celery, chucked em in.
Added 3 chopped carrots and a chopped courgette.
Threw in a pack of beef mince
Mixed till browned, pukka.
Waited till slightly tender.
Added 4 vine tomatoes, diced and 6 salad tomatoes, diced.
At some point I threw in the Italian herbs mix (which I won't go through ingredient by ingredient) with black pepper, some fresh basil, parsley and a bay leaf.
Then I added one of those little bottles of pinot grigio? White wine

So I have a question to the good cooks of goregrish
When cooking, red sauces..
What is the best wine to use? I know nothing about wine!
