Maybe the bulls were happy and not scared. I note the pictures I've seen, like the one above, do not show sharpened bits of steel shoved into their necks.
I also note that they use the upthrust of the bulls neck to gain upwards speed and rotational force to complete the leap. Bull's can't help with that when they get speared in the neck just to stop such an upward thrust of their heads.
