I don't live in Louisiana however a person I knew did and said that racoon's are a very popular dish in the swamplands, mostly black people but when you buy them they are already skinned. He told me if its a reputable dealer the front right paw will still be attached, if all the paws are cut off your most likely buying a dog.

I can add a little more, in the 80s a restaurant was caught selling cat, since then almost no one orders a rabbit dish whenever they eat out.
You just have to cut off the head and it's a real rabbit.

They did that in Georgia also. Some recipe where they grill it with the hide still on as I remember the stories.
