When I was a kid our local butchers, Mr Butterworth and Mr Morgan, both had missing digits. They were old fashioned butchers and the floor was always covered in clean saw dust. They could take apart an animal like nothing I'd ever seen since.

These days so called butchers use mesh gloves if they ever actually cut meat else just sell plastic wrapped stuff and you never see them actually cut.

I went to them when I had a project at school about eyes and they pulled out a couple of cows eyes for me.
