Amish Soft Pretzels

Makes 5-6 large pretzels

Dough

3/4 cup warm water
1/2 TBSP yeast
2 TBSP brown sugar
1 1/2 cups bread flour scant
1/4 cup unsalted melted butter for dipping after baking.

Egg Wash

1 beaten egg with 2 TBSP water

Dipping Solution

1/4 cup baking soda
2 1/2 cups hot water

Kosher salt optional

Line baking sheet with parchment paper and lightly brush with oil.

In a mixing bowl mix warm water and sugar. Sprinkle yeast over the top and let sit for 5 minutes to activate the yeast.

Prepare egg wash and set aside.

Add flour to yeast mixture and mix well. Knead until dough is no longer sticky. Gather dough into a ball and place in an oiled bowl. Cover and let rise in a warm place till doubled.

Punch down dough and let rest covered at least 10 minutes.

Divide dough into six balls and on a lightly oiled surface, roll into long ropes and then twist into pretzel shapes.

Prepare dipping solution in a large saucepan and turn stove to medium to keep solution hot. One at a time, gently place pretzel dough into the solution for 20-30 seconds.

Remove with a flat spatula and place on a the prepared cookie sheet reshaping as needed.

Brush with egg wash and bake in a preheated 450 degree oven for 5-12 minutes until they are golden brown. While baking, melt the butter in a small saucepan over low heat (do not let it brown or bubble).

Remove pretzels from oven. Dip them face down into the melted butter then sprinkle with Kosher salt and enjoy!

I like mine with cheese sauce. I usually make it while they are rising and keep it warm.

Cheese Sauce

2 TBSP unsalted butter
2 TBSP flour
1 1/2 cups milk or 1 cup milk and 1 cup half and half or whole cream.
1 cup cheese of your choice grated or chunked
dash of Tabasco
dash of white pepper
tiny dash of nutmeg

Melt the butter in a small saucepan over medium heat. Whisk in the flour and stir until well blended and thick. Add milk all at once continuing to whisk till well blended. Add Tabasco, pepper, and nutmeg. As sauce begins to thicken, add cheese. Lower the heat and continue to whisk until blended and thickened.
 
I take a London broil and cut it into bite-sized pieces for my chili and simmer in sauce after browning all day rather than use processed meat and then thicken it with instant masa mixed with jalapeno juice, otherwise just use the basic chili ingredients, chili powder, tomato sauce, garlic, oregano, cumin, onions, etc...but, I usually cook the beans separate because I don't really care for beans in chili....I like it on pasta!
 
Tracy's Wasabi Dressing

This is great in a pasta salad with veges or great on a chicken pizza with cashews and bean sprouts

Get a jar that you can shake add:
1 cup vegetable oil or light olive oil.
2 tablespoons of good peanut butter
2 dashes of soy sauce
4 dashes of sesame oil
1 clove of crushed garlic
3 teaspoons of wasabi paste
a dash or so of cayenne pepper
1/2 cup red wine vinegar
2 tablespoons chopped red bell pepper
2 tablespoons scant of chopped fresh cilantro

Put the lid on and shake until all of the peanut butter is mixed in

additions if you like
hot peppers
pineapple
green bell pepper
green onion, I wound up adding the green onion because I LIKE green onions :)
 
I make this about once a week. It's just a white bread recipe:

2 cups warm water (110 degrees F/45 degrees C)
2/3 cup white sugar
1 1/2 tablespoons active dry yeast
1 1/2 teaspoons salt
1/4 cup vegetable oil
6 cups bread flour
Directions
1.In a large bowl, dissolve the sugar in warm water, and then stir in yeast. Allow to proof until yeast resembles a creamy foam.
2.Mix salt and oil into the yeast. Mix in flour one cup at a time. Knead dough on a lightly floured surface until smooth. Place in a well oiled bowl, and turn dough to coat. Cover with a damp cloth. Allow to rise until doubled in bulk, about 1 hour.
3.Punch dough down. Knead for a few minutes, and divide in half. Shape into loaves, and place into two well oiled 9x5 inch loaf pans. Allow to rise for 30 minutes, or until dough has risen 1 inch above pans.
4.Bake at 350 degrees F (175 degrees C) for 30 minutes.
 
I also make a noodle salad most everyone loves.

1 box tri color rotini
1/2 cup diced onion
1/2 cup yellow squash, 1/4 and sliced thin
1/2 cup zucchini 1/2 and slice thin (2" diameter or smaller on both squash and zucchini, so you don't have big nasty seeds in it.)
1/2 cup carrot, sliced thin
1/2 cup chopped mushroom (optional)
1/2 cup chopped tomato
1/4 cup crumbled feta cheese
1/4 cup grated fresh parmesan cheese
1 16 ounce bottle of FAT FREE italian dressing. (fat free italian doesn't separate into oil and water)

Cook the noodles al dente, and drain and rinse well.
add all the vegetables, cheese, and italian dressing.
Let it sit at least 2 hours so the noodles absorb a lot of the dressing. I let mine sit overnight.

(Yes this is a personal recipe I perfected myself, if you prefer more of a vegetable, just add it, it's easy to alter to your personal tastes)

These are the famous disgusting cookies that look like cat poop (rolled in Grape-Nuts, which makes lovely fake kitty litter.)

There are two flavors-chocolate(dark brown), and gingerbread(light brown).

A warning from the contributor:
I seldom measure carefully so amounts may need adjustment, especially on flavoring. The cookies are dense and not very sweet, this is necessary so that they will keep their shape during baking. If you use white flour or sugar they may be tastier but they won't look like shit.

Chocolate ingredients:
1/2 cup honey
2/3 cup (1 and 1/3 stick) butter, margarine, or lard
1 egg
1 tsp vanilla or peppermint extract
2 cups whole wheat flour
1/3 cup cocoa powder
Grape-Nuts™ cereal

Gingerbread ingredients:
1/4 cup honey
1/4 cup molasses
2/3 cup (1 and 1/3 stick) butter, margarine, or lard
1 egg
1 tsp vanilla or peppermint extract
2 1/3 cups whole wheat flour
Spices (ginger, cinnamon, cloves) to taste (suggest with 1/2 tsp each)
Grape-Nuts™ cereal

Mix-ins (to your level of tolerance):
Coconut Tapeworms
Chocolate Chips
Butterscotch Chips
Peanut Butter Chips
Cooked Spagetti or Ramen noodles Roundworms
Corn
Peanuts
M & Ms


Microwave the honey till it bubbles(about 1 minute). Add the butter, (I've been told using lard makes for a more realistic texture and softer cookie) and the molasses, if any. Add the egg, mix well, then mix in all the other stuff. add mix-ins of your choice to some or all of the batter.

Chill 1 hour in the freezer or several hours in the fridge. Roll dough logs of random length and the diameter of cat poop. Roll some of the logs in Grape-Nuts and bake at 350 degrees till done (maybe 20 minutes).

You can combine the two doughs to make for a more colorful poop.

Serve in a disposable cat litter box on a bed of grapenuts, with a cat litter scoop. Improved effects can be achieved by decorating the box and scoop with melted chocolate or pudding. The contributor has heard that "mixing brown sugar with the Grape-Nuts sweetens up the cookie a bit while still looking truly hideous."
 
I rarely use recipes even when I'm baking. I'll try to share though in the best way I know how and eventually I'll post actual recipes once I have mine around. Haven't made much in a while so I'll start with something I can remember which is a soup I made last week. I make it often with some variations once in a while.

Cut up an onion. Put it in a pot with olive oil and cook. Add some carrots. Cook a little more. Add some garlic. Then add lots of broth (I prefer vegetable), a small amount of v8, and some water but not too much. Then add a bag of frozen brussel sprouts, a bag of frozen collard greens, a can of cannellini beans, oregano, basil, and black pepper. Then gnocchi which I bought premade. Makes it even easier. Then cook until everything is done.
