Americans don’t do liver, kidney etc, so American vs Scots haggis would be like conparing Burger King to a Rib Eye steak
 
I like the look of your kebabs and I do the same but with chicken. I find that beef tends to dry out too much when cooked on a grill or barbie unless it is marinated to keep the moisture in the meat. Lamb is a fatty meat that barbie's or grills really well.

Medium well or medium rare is perfect for beef stays juicy and loads if flavor still.
