That's looks great, man!
We had it back then at home too regularly for certain occasions but not the fruits and sweet stuff.
Or so-called Raclettes; small pans, everyone has 3 or 4 for frying on a stove/grill or hot stone on the table. Maybe you know it.

My own "recipe" (it's not exactly an ingenious invention, and is partly from cans). I first set two cups of Jasmine rice to cook in my Instant Pot along with several tablespoons of Jollof rice seasoning.

While that's going on, I cube, trim, and saute chicken breasts in olive oil, fresh garlic, lime zest, and a southwest chipotle seasoning mix that I really like.

I dump two cans of Ro-Tel (canned tomatoes and chilis), a can of kidney beans, and a can of red beans into a collander to drain.

Once the rice is done, I add the chicken and drained Ro-Tel and beans to it, then stir them thoroughly. I add more spices if needed. I let them all warm up in the pot for another 10-15 minutes, then serve on fresh-made flour tortillas with an Asadero shredded cheese mix, Daisy sour cream, and Herdez salsa verde.

I've just started stirring the "filling" up now:
