What's on the menu tonight?

I find the best way to fry them is doing it Slowly. So the oil is only just simmering. Then flick a wee bitta oil over the top and done.. Takes a while but you'll have AMAZING runny eggs. People tend to fry them way too quickly.


That was the THIRD account of theirs today. All 3 got banned within minutes.😂🤣
i dont use oil or butter when i make eggs. i use bacon grease. mmmmmmm........

You go first, I'll post mine soon!

Chili:

  • 1 lb ground chuck
  • 1 lb ground sausage (not Italian)
  • 2 ripe tomatoes, diced
  • 1 onion, diced
  • 1 garlic bulb, minced
  • 1tbsp each of cumin, chili powder, garlic powder, cayenne pepper powder, salt & pepper
  • Two 24 oz can tomato sauce
  • One 12oz can tomato paste
  • One cup real maple syrup
  • 1 cup diced jalapeños
  • Half a cup of bourbon
  • 1 can each of kidney beans, chili beans and red beans.

Brown meat with dry seasonings and garlic and throw it all into a crock pot. Taste the bourbon to make sure it's fresh.

Add the tomatoes, onions, and all the other shit, even the bourbon.

Stir it all up, let it cook about 6 hours and that's it.

If it doesn't taste right, taste more of the bourbon. Keep tasting the bourbon until the chili tastes good, too.

Red hot! Can I suggest a tablespoon of ground coffee in that, really enhances the flavors with no coffee taste.

None taken! I searched for a recipe thread before posting this and nothing popped up. Care to point me to it?
 
Made a shepherd's pie to eat over the long weekend. Made it with lamb shank instead of ground meat because I love braising things low and slow in the Dutch oven. Reggiano Parm for the golden crusty top, textured the potatoes with a fork before throwing it in the oven to finish it. Used red wine instead of stock to braise and reduce into sauce because I think it tastes better that way. I also think shank has more flavor (collagen, bone marrow, rendered fat, etc.) than ground meat and shanks were cheaper than ground lamb at the butcher shop.

Since the mood of last night's dinner was spoiled by a clogged drain it was fondue redux tonight.

Cheese fondue, freshly rebaked bread, green onions, bell pepper, radish, strawberries, dates and an okish red wine.
