When I was young I was obsessed about how to break into one of those armored bank trucks I must've thought up a kazillion ways to try and do it but nothing ever felt as if it would work. If it was a time where GPS didn't exist I think my idea of a crane on a big truck with a huge magnet might actually work ... just pick it up during transit and drop it into another much larger truck but I'd need to poison the driver or suffocate them before getting the loot out.

Bait them into shooting at you through a port and shove a hose in there, other end in the tailpipe, if they dont stop trying to get away and shut the car off they die.
