Thanks for asking my friend. This topic is close to my heart as my dad’s cousin was the first official women’s boxing world champion, Jane Couch (see pic).

Seizures (aka convulsions) result from disorganised brain waves and nerve impulses that result from the chaotic activity. I look at it sort of similar to a computer crashing, if it’s circuitry becomes disorganised it can scramble the processes resulting in erratic software behaviour or a total crash. So anything that can scramble the brains usual organisation can trigger a seizure such as ECT (we have seen recent in a thread) and children can get Febrile Convulsions if they get an infection that causes a rapid increase in body temperature (it’s the speed of change that triggers the seizure not the level of the fever).

In the case of this boxer there are several possibilities.

The force of the punch could have caused a sudden burst of nerve activity (like banging your funny bone but much more complex) resulting in the scrambled activity leading to loss of consciousness and then seizure. Increased pressure inside the skull can also trigger disorganised nerve activity, eg a bleed.

If the brain is starved of oxygen it can also trigger a seizure (Hypoxic Seizure) which could be simply lack of blood flow due to a drop in blood pressure. She was in an upright position despite looking unconscious before the seizure so this could be part of it.

It's crazy how delicate the brain actually is, and then even crazier when certain parts are damaged it will use other parts to make up for the loss and such.
