The sloth is too small for the anaconda to waste it's energy to eat. He would rather eat the camera man and it's a shame he didn't.

More than likely the snake once ate a sloth and realized how horrible it was to digest and tasted like poison so instead will wait for something more appetising, like a nice plump tapir or deer.
