I do not know how it would cook better in the bag thing than in a steamer or pressure cooker but it has the 'shazam' factor that is oh so important these days...
Have you ever seen the Chinese method of cooking fish where they place cool wet towels over the head and gills whilst immersing the body in boiling water. The fish is served with the head and gills still 'breathing' and moving whilst the body is cooked.

I like the dish they served it on with it's chicken legs and feet.
To me it is a crude showmanship for overpriced chicken.
The breed is known to taste better than other chickens so the price is much higher the legs are left on so the band on the leg verifies it is authentic. But as for the cooking process that is a big no no for me baked, fried or grilled. steaming or boiling meat is nasty.
