Actually, I think the little guy is a capuchin monkey and in the US they have been trained to be 'assistance animals' for disabled people.
This one obviously has been trained to bend beans, and very good he is at his job, especially the facial expressions when he comes across a tough one.
I think these days they have been banned as California PETA fags (apologies to Zero, Rick James and others who may live in that glorious state which, alas, Australia's 'progressives' seem to love to copy) got all upset because it looks too much like slavery.
