Hi Jiz, the most important thing is to rinse the uncooked rice first under the cold tap, I put it in a metal sieve and keep flipping it over. Then I boil the rice until it is almost cooked then pour it back in the sieve and stick it straight back under the cold tap to stop it cooking any further. Next I scramble up an egg in olive oil, break it into small pieces while its still cooking. Add the rice after it has thoroughly drained and heat through, add a tablespoon of oil if needed, splash of soy sauce if you want but not too much or you'll end up with a brown mess. The result is the lightest, fluffiest egg fried rice that you can get.I'll give that a go tonight. It'll be like pilau rice then i sopose?
