Done. It’s about as authentic as I’ve come across. Going to let it cool over night, slice it thin and eat it with smoked mussels and onions tmw for breakfast

The last of my Corned Beef and Marble Rye went to a traditional Reuben made at home. I didn't have any Thousand Island (Russian) dressing, so I had to use Hellman's mayo, Heinz ketchup, homemade Amish Relish, minced some garlic and onion and squeezed a bit of lemon in. I have a love/hate relationship with Mayonnaise, at times it is a necessary evil... The Marble Rye got slathered in Mayo also, before I grilled them in a pan. My saute pans are all too small so I had to grill each slice of bread separately and I cheated a bit. I melted the Swiss on the bread in the oven.

I love when the skin is crisp and crackeling.
Next week Hawaiian Luau. I love a dirty slow cooked suckling child with pineapple rings and poi.
Following week, my favorite, baby back ribs...
