It's called a ''Croque-Madame'' when you add an egg on top. To find a brasserie in France that serves this kind of wonder is as rare as a prostitue in a church.

Rarebit is amazing with Hendo’s. Made in my city, like a sweet and zingy condiment. Not as strong as Worcestershire Sauce so goes well in most things. My Yorkshire peers may agree.

There's a proper French brasserie (Cassis Bistro) that serves an excellent CM. There also used to be a vendor in one of our farmer's markets that did it quite nicely but I believe they've closed.
