If this was a state of war or extreme social upheaval and I must take an officer's gun to survive, I am not going to just run up and take it. A mug of sulfuric acid to the face would come first, then followed by me removing the gun and mags once the target is writhing on the ground with his/her entire face melting away. Most semiauto pistols nowadays are carried in retention holsters so you cannot just grab the butt of the weapon and pull it out. You have to know how to operate a retention holster.
