From what I read about it, the shark bit off his arms first early on so all he could really do was float. There was no hope for him.

Sharks don't usually eat humans as a matter of course. They need high energy food and that mean blubber, not bone and muscle. So, humans aren't on sharks dietary list. Sure.mistakes are made, and most 'attacks' aren't feeding event. Simply a bite then let go.
